Chewy Sugar Cookies

My original intent was to make these sugar cookies and roll them in orange sugar to be festive for October, but I couldn't find any orange sugar in my baking cabinet. They still came out pretty though. They are similar to the chewy Pepperidge Farm cookies, but they aren't quite as thick. I try not to eat much sugar, but I've already had 4 of these. That's how good they are!
Chewy Sugar Cookies
Adapted from Bunny's Warm Oven (I omitted the lemon)

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 1/2 teaspoons vanilla extract
1/2 cup sugar for rolling cookies
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
Using a mixer, beat together the butter and sugar until smooth and very fluffy. Beat in egg and vanilla extract. Gradually blend in the dry ingredients.
Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Hi! I found your blog searching some cookie recipes, and I found this, that is one of the recipes I have been loorking for since a long time!! Your blog is amazing, so much yummy things. Well, I have a question about this recipe. After I roll the cookies, I have to flattern them or they will spread in the oven?

Lauren said...

Hi Eris- thanks for your comments! These cookies spread in the oven. You shouldn't need to flatten them first. Good luck!

Boy these look good. I love a sugar cookie that doesn't involve labor intensive rolling and icing, etc. I am going to try these~!

Made these several times and everyone brags on them.

I made these tonight and they came out perfectly resembling the pictures and they were delicious. They have a nice balance between chew and crunch! These are a must-try! Thanks!

It's the first time I made 'American' cookies and they are just soooo good.
Somehow they are smaller even though I thought I took the right amount of dough. But never mind, they still are delicous

This is the best sugar cookie EVER!!! I gave up chocolate for Lent and was on the search for something (sans chocolate) to satisfy my sweet tooth. I found one recipe to this that was very similar but basically just tasted like butter and sugar. This recipe only had 3 difference from that recipe but it was just enough to make the cookies *perfect*. Two changes in instruction that may or may not make a difference: mix the butter and sugar for approx 3 minutes with the electric mixer and then mix the egg in until well combined. Also, after putting the dough balls on the baking sheet, lightly press each cookie down before baking. I only baked them for 8-9 minutes and they were still pretty soft/puffy when I took them out but they set up nicely and are soft and chewy and AMAZING :)

I would check the expiration on your baking soda and baking powder. That is usually the culprit when cookies go haywire.

AAAAAAMAZING sugar cookie! Thank you so much! I'll never use another recipe! I didn't change anything but the baking time, went to 12 minutes but my oven is old so I'm sure that had something to do with it! ♥Thank you!

What luck it was that I was too lazy to make sugar cookie cutouts and stumbled on tothis recipe!!!! OMG these are amazing. I will never make another sugar cookie. They are so moist and chewy and taste like a sugar cookie but without any effort to make. I usually swear and end up getting mad while fighting to roll out sugar cookie dough but no more these are my sugar cookies from now on.

This recipe is amazing! I just made 1,000 of these cookies for a church fundraiser and everyone loved them. Thanks for sharing the recipe!

I literally just got done making these and I ran into the same problem a few other readers had. The cookies did not flatten on their own, so for the second batch I flattened them myself. The flavor is amazing. I followed the recipe exactly, is there something I'm doing wrong?

Sounds delicious, I want to give it a try. But the problem is that I don't have an oven. Can I use a microwave oven instead? If it is possible then please let me know how.

Would you need to refridegerate the dough or sift the dry ingrdients ?

This is how my cookies turned out. Dry and falling apart. They did not spread out at all. Not sure what I did wrong. We're wondering if maybe Saffire flour makes a difference compared to All purpose flour? I used Saffire. The flavor is good though.

LOVE these cookies! My husband is a huge sugar cookie fanatic and these are my go to recipe for him. I kept trying to figure out how to get sprinkles on them like in the bakery section at the grocery store. Tonight was my success! I added little colored sprinkles (the tiny balls like on nonparallels) to the sugar for rolling. Dropped the batter into the sprinkle-sugar mixture and rolled away. What a fantastic display of rainbow sprinkle sugar cookies I now have cooling on my counter as I type this! Thank you for this recipe :)

Just made these and they are delicious! Mine needed more like 10-12 minutes for cook time but aside from that this is the perfect sugar cookie recipe!, this will be my go-to from now one. Can't wait to make these again!

Delicious! I damn near ate the entire batch by myself! Our oven needed 13 mins.

Hope I haven't sent multiple comments, but want to make sure you read this. I really appreciate you posting this recipe. They are SO easy to make and DELICIOUS. I cannot believe how easy they are to make. I use a cookie scooper, lightly press down on them, and bake for 9 minutes. They are chewy and yummy. I make a vanilla bean glaze to coat them with and makes them even more delicious. THANK YOU

I made these cookies last night and they are absolutely delicious! I followed the recipe exactly and they turned out perfect!

About how many cookies does this recipe turn out?

Jen Barnard said...

I've just made these, and yes mine were really pufffy after 8 mins too, they took 15 min to cook in the end (and wern't puffy any more). I got 75 cookies! Half a batch would have been tons for me, so I'll cut down next time.

The best cookies I’ve ever eaten (made) are under baked. Bake no more than 8-9 minutes, the will look soft and doughy but will set up.
